Make-ahead: Pie needs 4–6 hours to set (overnight is best). Add whipped cream and berries day-of.
Storage: Cover and refrigerate up to 3 days. Avoid freezing as gelatin desserts can become watery after thawing.
Variations: Swap Jell-O flavors (raspberry, cherry) or use chocolate cookie crumbs for the crust. A teaspoon of lemon juice in the gelatin mix brightens the strawberry flavor.
Troubleshooting
Filling too soft → gelatin wasn’t fully dissolved or mixture was too warm when folded with cream.
Rubbery set → too much gelatin (double-check packet size) or over-chilled before pouring into crust.

No-Bake Strawberry Jello Pie
This no-bake strawberry Jello pie is a retro-cool treat with a buttery graham cracker crust, a silky strawberry mousse-style filling, and a crown of whipped cream and fresh berries. It comes together in minutes with pantry staples. No oven needed and chills up beautifully for a sliceable dessert that serves 6–8.
Crust
12 graham crackers
¼ cup unsalted butter (softened)
Filling
1 3 ounce packet strawberry jello mix
¾ cup boiling water
¾ cup cold water
1 cup heavy cream (cold)
¼ cup granulated sugar
Topping
Whipped cream
4 whole strawberries with leaves (cut in half)
Start by adding the graham crackers to your food processor and processing until they turn into crumbs, about 30-60 seconds.
Then add in the butter and process until the mixture starts to clump.
Pour the mixture into your greased pie dish. Place the crust in your freezer while you make the filling.
Boil ¾ cup water in your microwave, about 2 minutes, then mix that with the jello mix and cold water, let sit for 15 minutes in the fridge.
While the jello mixture is in the fridge, beat the heavy cream and sugar with your handheld mixer, and place in the fridge or freezer until the jello’s 15 minutes in the fridge is up.
Then use your handheld mixer to beat the jello mixture into the heavy cream mixture until smooth.
Pour the filling on top of the crust and let set in the freezer for 4+ hours, or until firm.
Top with whipped cream and strawberries and enjoy!
